Arugula, also known as garden rocket salad, is a highly nutritious leafy green vegetable of Mediterranean origin. It belongs to the brassica family—a cruciferous vegetable, hence is a rich source of certain “anti-cancer” phytochemicals such as indoles, thiocyanates, sulforaphane and iso­thiocyanates. Try this simple-to-prepare and simply delicious summer salad.

Simple Arugula Salad

Yield: 4 servings (serving size: ~1 cup, 94 grams)

· 10 ounces (2 bunches) fresh arugula
· Juice of one lemon
· 1 tablespoon white wine vinegar
· ¼ cup extra virgin olive oil
· Dash of freshly grated pepper
· Hard Parmegiano Reggiano cheese, 4 shavings

Remove ends of arugula, rinse and pat dry. Add lemon juice and vinegar to a salad bowl. Whisk while drizzling in the olive oil. Add arugula and toss. Add pepper and top each serving with one or two shavings of cheese.
